Peaches, Peaches and more Peaches

It is this time of year for the past few years since we have been in Oklahoma that I have started canning and creating recipes. These BEAUTIFUL peaches came from  Cunningham Orchard .

I have had great success canning them (19) quarts worth this time around.

But today I want to share one of my newest creations;

Pan Seared Caramelized Peaches with Vanilla Ice-Cream

Ingredients:

4-6 Peaches pit removed ( you can take off the skin if you prefer)

A smear on each face side with Coconut Oil

Sprinkle with Cinnamon,Brown Sugar and Maple Syrup

Pint of your favorite brand of Vanilla Ice-Cream

How To:

Heat a cast iron skillet until a little smoky. Place your peaches face down in the pan. Do Not walk away this will take just a few minutes.

Flip them over, once that under side is browned. Sear for another few minutes then remove to a plate to cool a bit.

After 5 minutes ( I wanted them to still be warm) it’s time to bowl up. A scoop or two of vanilla ice cream, your peach and if you like a little more sweetness add another drizzle of Maple Syrup on top.
